
Love on the Sizzle Steak Fajitas
A tear-and-share Valentine’s feast made for lingering at the table. Juicy spiced steak, molten mozzarella and smoky peppers come together in warm wraps, casual, cosy and just indulgent enough for date night.

Ingredients (serves 2, generously):
Homemade Fajita Spice Mix:
1 Tbsp ground cumin
1 Tbsp crushed chilli flakes
1 Tbsp granulated garlic flakes
1 Tbsp paprika
1 Tbsp dried oregano
1 Tbsp salt
1 Tbsp freshly ground black pepper
Filling
2 steaks of choice (sirloin or rib-eye work beautifully), room temperature
2 Tbsp olive oil
1 whole onion, sliced
1 whole red pepper, sliced
1 whole green pepper, sliced
1 jalapeño, sliced
A splash of water (if needed)
150 g mozzarella, cut into small cubes
To finish:
Sour cream
Guacamole
Fresh jalapeños, sliced
Fresh red chilli, finely diced
Fresh coriander leaves
Juice of 1 lime
Soft wraps, toasted
Method
1. Combine all the spices in a bowl to create your homemade fajita spice mix. Keep 2 tablespoons of the fajita seasoning aside.
2. Generously coat the steaks with the dry rub, pressing it into the meat. Set aside to marinate while you prep the vegetables.
3. Heat a heavy pan over high heat with the olive oil. Once hot, add the steaks and sear well on both sides until beautifully caramelised.
4. Remove the steaks from the pan and set aside to rest. Once rested, slice against the grain.
5. In the same pan, add the onion, red pepper, green pepper and jalapeño. Add a splash of water if needed to lift the flavour from the pan.
6. Sprinkle over extra fajita spice mix and stir through to combine.
7. Add the sliced steak back into the pan along with the mozzarella cubes. Allow the cheese to melt gently through the mixture.
8. Turn off the heat and dollop over sour cream, guacamole, fresh jalapeños, diced red chilli and coriander. Finish with a generous squeeze of fresh lime juice.
9. Toast the wraps, place everything in the centre of the table and tear, fill and share with your loved one this Valentine’s Day.
Tips and notes:
- Don’t slice the steak before cooking, keeping it whole prevents overcooking and keeps it juicy.
- Let the steak come to room temperature before cooking for the best sear.
- Mozzarella adds a creamy, indulgent twist but cheddar also work well.
- Serve straight from the pan in the centre of the table for an effortless, romantic feel.
